Croque Madame

Rich, cheesy, and absolutely irresistible — just like something you’d order at a Parisian café.

A classic croque madame with Mornay sauce, toasted bread, ham, cheese, and a soft-boiled egg.

For the Mornay sauce

    Melt the butter over medium heat. Add the flour and cook for 1–2 minutes, stirring constantly.

    Gradually whisk in the milk until smooth. Continue cooking until the sauce thickens.

    Reduce the heat to low. Stir in the egg yolk, grated cheese, salt, pepper, and nutmeg.

    Mix until smooth and creamy.

    Toast the bread until lightly golden.

    Spread some Mornay sauce over the toast and sprinkle with the grated cheese.

    Place under the broiler (grill setting) at 200°C (400°F) for 10–12 minutes, or until the cheese is melted and golden.

    Meanwhile, put the egg in boiling water and cook for 6 minutes, then peel it carefully.

    Top the toast with the ham and soft-boiled egg.

    Spoon over more Mornay sauce and finish with grated Parmesan and freshly ground black pepper.
