Crispy Chicken Caesar Cutlet

Ingredients

- panko breadcrumbs
- vegetable oil
for the salad
- romaine lettuce
- 30–40 g parmesan
- croutons
for the caesar dressing
- 3 tbsp mayonnaise
- 1 tbsp greek yogurt
- 1 tsp dijon mustard
- 1 clove garlic (minced)
- 1–2 tsp lemon juice
- 2–3 fillets anchovy fillets (finely chopped)
- 1 tsp worcestershire sauce
- parmesan, grated (to taste)
- salt

Directions

Butterfly the chicken breast and gently pound it until even in thickness.

Season the flour with salt, black pepper, and paprika. In a separate bowl, season the panko with salt, black pepper, paprika, and Italian seasoning.

Coat the chicken in the seasoned flour, then dip it into the beaten eggs and finish with the seasoned panko.

Fry over medium heat until golden brown and crispy on both sides. Transfer to a paper towel-lined plate.

To make the dressing, combine the mayonnaise, Greek yogurt, Dijon mustard, garlic, lemon juice, Worcestershire sauce, chopped anchovies, grated Parmesan, salt, and pepper.

Toss the romaine with the dressing, Parmesan, and croutons.

Top the crispy chicken with the Caesar salad, then finish with freshly grated Parmesan and a few Parmesan shavings made with a vegetable peeler.
