Beef Tortilla Pinwheels

Ingredients
Filling
- 400 g ground beef
- 1 onion (small, finely diced)
- 2 garlic cloves (minced)
- 1 fresh parsley (small bunch, finely chopped)
- 1 tbsp tomato paste
- 2 tbsp crushed tomatoes
- 1 tsp sweet paprika
- Salt
- Black pepper
- 1 tbsp olive oil
Base
- Large flour tortillas
Tomato glaze
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 2–3 tbsp water
- pinch paprika
Yogurt sauce
- 250 g Greek yogurt
- 1 garlic clove (minced small)
- Salt
- 1 tbsp lemon juice

Finely dice the onion, garlic, and parsley. Combine them with the ground beef, tomato paste, crushed tomatoes, paprika, salt, black pepper, and olive oil.

Spread the beef mixture in a thin, even layer over each tortilla.

Cut into long strips about 3–4 cm (1¼–1½ inches) wide. Roll each strip into a tight spiral, then thread several spirals onto wooden skewers.

In a small bowl, whisk together the tomato paste, olive oil, water, and paprika. Brush the skewers generously with the glaze.

Bake at 190°C (375°F) for 25–30 minutes, or until the beef is fully cooked and the tortilla edges are crisp and golden.

Meanwhile, mix the Greek yogurt with the garlic, lemon juice, and a pinch of salt.

Spread the yogurt sauce onto a serving plate, place the skewers on top, drizzle with a little olive oil, and finish with freshly chopped parsley.
